Den Gaggia XE Evolution er en espresso-maskine udviklet i midten af 2010'erne og anvendes i kommercielle applikationer. Den XE versionen er den manuelle version af Evolution. Den XD versionen er den volumetriske version af Evolution.

Den XE modellen produceres i 2 og 3 gruppe versioner. I gruppe 2 var der en enkelt kedel med en kapacitet på 13 liter vand, og i gruppe 3 var der en 21 liter kedel. Hvor gruppe 2 bruger et 5000W varmeelement til at opvarme kedlen, når du har gruppe 3 versionen dette gøres med et 6000W varmeelement.

Den XE er også udstyret med to manuelle damprør, et på hver side. I midten finder du en dispenseringsenhed til varmt vand. For at dispensere vand fra bryggegruppen har man kun en på/af-mulighed, da det er en ikke-volumetrisk model.
