How to find the correct control knob
Start with the information on the machine, existing knob or the thermostat, switch, regulator or valve underneath it. An OEM, equipment or component reference is normally the strongest identification point. If no reference is available, identify the exact machine and the function of the control before measuring the knob or shaft.
A practical selection order is OEM or component reference → equipment manufacturer → exact model or series → control function → shaft or mounting interface → scale and markings → indicator orientation where relevant → knob dimensions → component manufacturer where relevant → OEM/original or compatible → product.
A matching diameter, colour or shaft-hole dimension alone does not confirm compatibility.
Identify the control function first
Control knobs in professional kitchen equipment can operate different underlying components, including thermostats, energy regulators, selector switches, timers, gas taps and other mechanical or electrical controls. The required knob must correspond with the function of the component behind the control panel.
A knob designed for a thermostat can have the same outside diameter and shaft interface as a knob for a switch or energy regulator while using completely different markings or operating positions.
Mechanical adjustment knobs used on dough-processing equipment or slicer carriages should also be identified by their specific machine function and mounting system rather than treated as interchangeable electrical-control knobs.
Shaft profile and mounting interface
The connection between the knob and the underlying control is one of the most important technical specifications. Common products in this category use D-shaped shaft holes, but other mounting systems such as keyed bores, threaded connections and adaptor inserts also occur.
D-shaped interfaces can have different dimensions, including formats such as 6×4.6 mm, 8×6.5 mm, 9×6.5 mm and 10×8 mm. These dimensions are not interchangeable unless the product is specifically designed with a suitable adaptor.
Also verify the depth, fixing method and orientation of the interface where these specifications are available. A knob that slides onto the shaft does not automatically provide the correct functional position.
Do not select a knob by diameter alone
Outside diameter mainly describes the physical size of the knob and does not define its compatibility. Two knobs with the same diameter can have different shaft holes, scales, mounting systems or intended control functions.
Likewise, a smaller or larger knob is not necessarily incorrect if the OEM application specifies that design. Use diameter as a secondary comparison after the machine, component and shaft interface have been identified.
Scales, markings and control positions
Many control knobs have printed temperature, time or operating-position scales. Examples can include temperature ranges, timer scales, numerical regulator positions and on/off or multi-position markings.
The scale must correspond with the underlying thermostat, regulator, timer or switch. A knob with the correct D-hole but a different temperature range or switching sequence can give an incorrect indication of the actual control position.
Also compare the zero position, pointer or index position and shaft orientation where these details are relevant to the control.
Thermostat and temperature-control knobs
For thermostat knobs, begin with the thermostat or OEM reference and exact equipment application. Then compare shaft profile, D-hole dimensions, temperature range, scale direction, indicator position and knob diameter.
Do not select a thermostat knob only because the temperature range appears similar. The underlying thermostat, shaft interface and scale orientation must also correspond.
Specialist component manufacturers such as EGO can supply thermostats and energy regulators used in equipment from multiple machine manufacturers. In these cases, distinguish the component manufacturer from the manufacturer of the complete appliance.
Energy-regulator, selector-switch and timer knobs
Knobs for energy regulators, selector switches and timers can use numerical, time-based or function-based markings. Verify the component reference and number or sequence of operating positions before comparing the physical knob.
Relevant specifications can include shaft dimensions, D-flat orientation, scale such as 0–1–2–3 or 1–10, timer range, pointer position and mounting depth.
The same shaft size does not make knobs with different scales or switching sequences interchangeable.
Gas-tap knobs
For knobs fitted to gas taps, verify the exact equipment and gas-tap application before comparing the shaft connection. Relevant details can include D-hole dimensions, off/ignition/flame markings, orientation, fixing system and knob diameter.
Do not assume that a generic black gas-tap knob fits all gas valves with a visually similar shaft. The mechanical interface and control-position markings must correspond with the intended gas tap.
Mechanical adjusting and carriage knobs
This category can also contain knobs used for mechanical adjustment rather than electrical control, such as adjusting knobs on dough-processing machines or carriage knobs on slicers.
For these parts, select by OEM reference → exact machine/model → function and position → threaded, keyed or other mounting interface → thread or bore size → overall dimensions.
A mechanical knob with an M-thread or keyed bore should not be compared with thermostat or switch knobs only by its outside diameter.
Universal and adaptor control knobs
Some replacement knobs are designed to work with more than one shaft size by using interchangeable adaptors. Treat these as multi-fit components within the specified interfaces, not as automatically suitable for every control shaft.
Before using an adaptor knob, verify that the supplied insert matches the exact shaft profile and that the knob's function, markings, orientation and available installation space are suitable for the application.
An adaptor can solve a shaft-size difference, but it does not make an incorrect scale or control function compatible.
Equipment manufacturer versus component manufacturer
The manufacturer filter can contain both equipment manufacturers and specialist component manufacturers. These roles should be distinguished when selecting a replacement.
Relevant equipment-manufacturer routes include Angelo Po, Mareno, MKN, Rational and Zanussi. EGO is an example of a specialist control-component manufacturer whose thermostats or regulators can be used in equipment from other brands.
Where available, distinguish equipment manufacturer → exact machine → component manufacturer → component reference → shaft/control interface → knob.
Manufacturer filter and compatibility
The manufacturer filter should not be interpreted as a complete list of every equipment brand for which products in this category may be suitable. Other brands can occur in model or compatibility information without being assigned as the manufacturer of the replacement component.
A machine-brand match alone also does not confirm fit. Professional equipment from the same manufacturer can use different thermostats, switches, gas taps and shaft interfaces across different models or production versions.
OEM/original and compatible control knobs
The assortment can contain both OEM/original knobs and Compatible (non-original) replacements. Product origin and machine compatibility should be treated as separate information.
A compatible knob can replace an OEM reference or be intended for equipment from a particular brand without having been manufactured by that equipment manufacturer.
For either origin, verify reference → exact equipment → control function → shaft/mounting interface → scale and orientation → origin before ordering.
Before ordering a control knob
Verify the available OEM or component reference, exact equipment manufacturer and model, function of the control, shaft profile, bore dimensions, mounting method, scale or markings and knob dimensions.
Where possible, compare the removed knob together with the thermostat, switch, regulator, timer or gas tap underneath it. Do not assume that two knobs are interchangeable because they have the same outside diameter or D-shaped hole.
