Choosing the right milk pitcher

The right milk frothing pitcher depends mainly on how much milk you want to steam at one time. Smaller pitchers are practical for preparing one cappuccino or flat white, while larger milk jugs are useful when preparing several drinks or larger milk-based coffees.

Do not fill the pitcher completely before steaming. Milk expands as air is incorporated, so sufficient free space is needed to create smooth and controlled microfoam.

Stainless steel milk pitchers

Stainless steel is commonly used for professional milk pitchers because it is durable, easy to clean and allows the barista to feel the temperature of the milk through the wall of the jug. This can help when judging when the milk has reached the desired steaming temperature.

Milk pitchers for latte art

For latte art, both the texture of the milk and the shape of the pouring spout are important. A controlled pour makes it easier to combine steamed milk with espresso and create patterns such as a heart, tulip or rosetta.

The best pitcher size depends on the drink and the amount of milk required. Using a pitcher that is unnecessarily large can make it more difficult to control a small quantity of milk.

How to steam milk in a pitcher

Start with cold milk and position the steam wand just below the surface. Introduce a small amount of air at the beginning and then create a rolling movement in the pitcher to distribute the air throughout the milk. The goal is a smooth texture with very fine bubbles rather than a layer of coarse foam.

After steaming, wipe and purge the steam wand immediately. Swirl the milk pitcher gently before pouring to keep the milk and microfoam evenly combined.
